Celebrate St Patrick's Day with Irish Pizza!

It's not just the Italians who love pizza! We try a beef, leek, and crispy potato pizza in honour of St Patrick!


It’s that time of year again when shamrocks adorn the walls of pubs, and English people pretend they have some connection to Ireland as an excuse to drink excessively and celebrate the snakes being driven out of the Emerald Isle!


St Patrick’s Day is by far the most eagerly celebrated of any St’s day so we thought we’d add a twist to the fun with this recipe for Irish beef, leek, and crispy potato pizza… there might even be a hint of Guinness in the crust!

Ingredients


For the dough

  • 200g self-raising flour

  • 135g semolina flour

  • 68g durum flour

  • 1 tsp salt

  • 1 tsp instant yeast

  • 2 tbsp olive oil

  • 340g warm (37°C) Guinness

For the toppings

  • Corned Beef

  • Sauteed Leeks

  • Hash browns

  • Mozzarella Cheese

  • Irish Cheddar Cheese

  • Fresh Thyme

  • Fresh Chives


Method

Step 1

Combine the dry ingredients, oil, and 1 cup of Guinness, mixing and kneading everything together until you’ve made a soft, smooth dough.


Step 2

Place the dough in a large bowl, lightly covered with plastic wrap, and let it rise at room temperature for 60 to 90 minutes, or until it begins to look puffy. In the meantime, preheat the oven to 200°C.


Step 3

While the dough is rising, prepare all your toppings; chop the leftover corned beef, sauté the leeks and set them aside to cool, cook the hash browns until crispy and set aside to cool, grate the cheese & chop the thyme and chives.


Step 4

Once the dough has risen, divide it into two equal portions and place each on a lightly oiled 12″ pizza pan, or on parchment paper lightly spritzed with cooking spray. Use your fingers to press the dough outward from the centre to make a very thin, flat circle about 12″ across. Spread the toppings over the dough, keeping in mind not to overload the thin crust. Hold the chives aside to sprinkle over the pizzas once they are out of the oven.


Step 5

Bake for 12 – 15 minutes, or until the crust is golden brown and cheese is hot and bubbly. Top with chives and serve immediately.
